Savage Sandwich Shop Owner Opening New Location in Eagan

Which Wich, located at 2000 Rahncliff Court, will open on Feb. 19, according to owner and Eagan resident Jeff Eccles.

Olive spread, blue cheese, bananas, shrimp. Those are just a few of the more than 61 toppings that customers at the soon-to-be-opened Which Wich sandwich shop at 2000 Rahncliff Road in Eagan. The restaurant, part of a national chain based in Texas, plans to open on Feb. 19, according to owner and Eagan resident Jeff Eccles. Eccles, who owns another Which Wich location in Savage, says the restaurant's variety sets it apart from it's competitors. Which Wich has 51 sandwiches on its menu, and hundreds of possible combinations that more adventurous sandwich enthusiasts can try. From Hooters to Hurricane

A Florida wings chain, Hurricane Grill & Wings, is expanding into Minnesota and its first location will be in the old Hooters building in Burnsville.

The old Hooters building will be home to another Florida restaurant chain—Hurricane Grill & Wings, a family restaurant and bar that could give Buffalo Wild Wings a run for its money. “We saw a really great opportunity to expand Hurricane Grill & Wings to Minnesota,” Mitch Peterson, president of Torgerson, said in a statement to Twin Cities Business. “Minnesota is full of wings fans.” According to news releases from the company, the Burnsville location will be the first of 17 in Minnesota, and represents just small part of an aggressive expansion plan that will ultimately bring the restaurant to Louisiana, Georgia, Alabama, and North Carolina. A deconstructed quesadilla puts a modern spin on traditional Mexican ingredients.

"I'm from the area and Chef Ricardo Carmona is from Mexico City," Ryan McGunnigle, owner of Las Tortillas Mexican Restaurant in Rosemount explains. This simple explanation goes a long way to describing the philosophy of the menu at Las Tortillas. While dedicated to preparing fresh tortillas, authentic family recipes, and handmade ingredients, there is also an original approach to age-old dishes. Puerco verde quesadilla, a heaping combination of tortillas, carnitas, salsa and cheese, is what Ryan calls "our interpretation of a quesadilla" and certainly looks like a new version of the traditional recipe. The experience goes beyond looks, as the tangy, crispy and rich flavors mix in a way that is both new and familiar.

Bites Nearby: 'Let's Go' to Andiamo in Eagan

This new Italian eatery gets fresh.

Andiamo Italian Ristorante has been in Eagan for less than a year, and they've already held a charity buffet, established a catering business and become a lunch-time destination for area workers. Ramon Ruiz, chef and owner, prides himself on the quality cooking and said he checks every meal that leaves the kitchen personally.  Chicken Andiamo is Ruiz's signature creation. In this week's Bites Nearby, Ruiz showed us everything that goes into the colors and flavors of this popular dish.
