Kids Eat Their Vegetables at Sky Oaks Elementary in Burnsville

Roasted vegetables, "sprinkle or scoop," and fun activities encouraged healthy eating at the school.

Serving healthy school lunches to students at Sky Oaks Elementary is a pretty normal occurrence, according to the Let's Move Blog.

Let's Move is a initiative created by Michelle Obama to emphasize better nutrition for children.

To encourage students to eat more vegetables, staff cooked roasted vegetables and offered students a sprinkle or scoop of vegetables. 

Tracy Smith, cook manager at Sky Oaks Elementary, wrote: "It gives me great pride to see how many "scoops" we actually serve now. In fact, while ten pounds of veggies used to last the entire lunch service, today we cut it close when we roast up 75 pounds!"

The school also integrated fun activities into lunchtime as other ways to encourage healthy eating. Some of these activities included trivia, guess the grain, and "Mystery Servers."

Said Smith, "It’s amazing when you see your students come to the realization of how delicious fruits and veggies truly are."
