Casper's Owners Give Thanks to Eagan Fire Department

After recovering from a disastrous fire, on Sunday the restaurant will host a fundraiser for the men and women of the Eagan Fire Department who came to their aid.

After months of rebuilding following a disastrous fire, will reopen its doors this Sunday to host a fundraiser for the Eagan Fire Department.

The event will provide an opportunity for community members to give back to Eagan’s volunteer firefighters and to get a first look at the newly renovated restaurant.

“It’s just a small way to say thank you,” said Rick Casper, owner of Casper’s.

While portions of the restaurant—including an outdoor deck—were when a fire swept the building last October, the fire department responded in time to save the building.

The department’s actions will be immortalized on Casper’s new menu. Upon reopening, Casper’s will offer a new burger, called the “Eagan’s Firehouse Number Five Burger,” named after the firehouse that responded to the emergency report.

Casper’s will also offer up a spicy tribute to the fire itself, with the “Blazing Barn Burger.”

Sunday’s fundraiser will include outdoor activities for children and music, hors d’oeuvres and a cash bar for adults. A truck from Fire Station Number Five will be on display and local State Farm agents will attend as sponsors of the event.

“It’s really humbling,” said Eagan Fire Chief Mike Scott. “We’re just doing our job.”

100 percent of the revenue from the fundraiser’s cash bar will benefit the fire department. Casper’s hopes to raise $2,000-$5,000. The funds will be used to purchase new, European-style helmets for the department. These helmets include mounted LED lights and are lime green in color, to increase visibility.

The fundraiser will take place from 2-6 p.m. on May 6 at Casper’s Cherokee of Eagan. Attendance is free. Casper's will open for normal business hours on May 7.
